1 pound kielbasa sausage, sliced into rounds

1 tablespoon olive oil

1 small onion, diced

3 cloves of garlic, minced

1 bell pepper, diced

2 cups uncooked pasta (penne, rigatoni, or your choice)

1 can (14 ounces) diced tomatoes

2 cups chicken or vegetable broth

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for a spicy kick)

Salt and pepper to taste

Grated Parmesan cheese, for garnish

Fresh parsley, chopped, for garnish


In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the sliced kielbasa sausage to the pot and cook until browned on both sides, about 5-6 minutes. Remove the sausage from the pot and set aside.

In the same pot, add the diced onion, minced garlic, and diced bell pepper. Sauté for 3-4 minutes until the vegetables are softened and fragrant.

Add the uncooked pasta, diced tomatoes (with their juices), chicken or vegetable broth, dried oregano, dried basil, red pepper flakes (if using), salt, and pepper to the pot. Stir well to combine all the ingredients.

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 12-15 minutes, stirring occasionally, or until the pasta is cooked al dente and most of the liquid is absorbed.

Return the cooked kielbasa sausage to the pot and stir it into the pasta mixture. Cook for an additional 2-3 minutes until the sausage is heated through.

Remove the pot from the heat. Taste the pasta and adjust the seasoning with salt and pepper if needed.

Serve the one-pot kielbasa pasta in bowls, garnished with grated Parmesan cheese and chopped fresh parsley.
